Certified Food Service Manager                                     

       Ms. Stubblefield has been employed by the Home for the Aged for 36 years.  She has been the food service manager for 12 years and assumes great responsibility for proper diet and nutrition for each and every resident.  Her menu planning takes into consideration individual food preferences, the nutritional needs of  senior adults  and daily consumption of foods using the Food Guide Pyramid.  "Older people do not require as many calories as the mature adult as a result of decreased activity however, they do need a well balanced diet, rich in nutrients that includes meat, poultry, fish, dairy products, fruits and vegetables."  According to the American Dietetic Association, the general diet will meet the nutritional needs of this group of people.

      Ms. Stubblefield oversees all food preparations, loves to try new recipes and beams with delight when her residents compliment her cooking.  But you can't please all the people all the time.  Even though liver and onions is often a request by residents, others choose not to partake of this menu item but, will always have an alternative main dish to please the palate.   Her specialty in the kitchen is home-made pies - chocolate, coconut, lemon, pecan, chess, you name it and  she can make it. 

 
 

DIET AND NUTRITION    Special diets can be prepared as required.  Residents are required to come to our elegant dining room for their meals.  They dine with other residents at the assigned meal times.  Family and friends are encouraged to join their loved one at mealtime and we will do our best to accommodate families for special occasions and holiday dinners.  Residents choose from the hot buffet and cold salad bar for general dietary foods.  Specific dietary modifications as ordered by a physician are provided to residents on an individual basis.  The dining room is accessible to residents for beverages at all times with the exception of floor cleaning, buffing and waxing schedules.
